Processes like mysqld and named turn out to be hidden because they run
chroot'ed, and hence are not visible in the standard /proc.

Don't know what this has to do with your problem, though.

Try sar and vmstat for more information on what the system is doing
when it's peaking.  I'd suspect either too many context switches or
major I/O (which shows up as idle in the CPU but adds to the load
average).  Also check for disks and suchlike having sector errors --
dmesg is your friend.
