Look at the man page (UNIX) for uptime, and that explains the three metrics as - they 
are the ... load averages for the past 1, 5, and 15 minutes.

Unfortunately, that still begs the explanation to the question - What is the load?
  
According to Dr. Neil Gunther, a recognized expert on performance management and 
capacity planning "The Load Average triplet is intended to provide you with some kind 
of information about how much work has been done on the system (especially on CPU) in 
the recent past (1 minute), the past (5 minutes) and the distant past (15 minutes)".
