AFAIK, it is the limitation of Exchange Protocol which
doesn't allow you to synch your mails to the local
folder. I am also using Evolution for Exchange since
last 8 months on Debian Sarge. If you use IMAP, you
get that option but then you can't use the Calendars.
POP3 doesn't serve the purpose either as I feel that
your mails are more secure on server because of
scheduled backups and chances of losing data is least.

I have faced issues with Address-Autocompletion -
Evolution crashes randomly while I type the address,
so I disabled that.
