Actually, you can't change the system font, it's hard-wired into the kernel.
But Tinker Tool does allow you to change the fonts used in Cocoa
applications. Not an elegant solution in the least.

That said, TT is an excellent app that can be used to do all sorts of other
things, like turning off font smoothing for slower machines, changing hidden
dock preferences and my personal favorite: enabling your windows to have up
and down arrows at both the top and the bottom of the scroll bars.
