It should do all these well. If you're doing a lot of digital photo's go ahead and up the memory. RAM is still reasonable, although up from a few months ago, and you cannot give OS X too much memory.

This will be my first new mac, thus plan to buy applecare with it.(any
comments?)

It's a lot of peace of mind for a reasonable (to me anyhow) cost. Plus you'll get a copy of Tech Tools for both OS X, and another for OS 9 with the program.

Any and all input gladly received and appreciated.

If size is not an issue? Then no reason you should not be very pleased with the eMac.
