Is there a way to see what is using RAM at any given moment?
In Mac OS 9 backwards just go to the Apple and go to "About this Macintosh" and you'll see the different programs memory allocation.
Oh yeah, it's "About this computer" isn't it, since the clones came. Shows how long one's been using Macs... ;o)
If you're using OS X I have to pass that one over as I have just recently stuck my toes in that puddle, and as I'm sitting on a PowerBook G3 (series 1) I can't do much to check at the moment.
But to me it seems as if you've got a system problem and would advise that you reinstall the system...
