As for not opening SPAM, why? unless you're using MSOE, Entourage or allowing graphics to be downloaded for html messages SPAM can be opened safely. I would recommend an excellent and very secure email client like Bare Bones Software's Mailsmith. Even MacSOUP is a decent no-frills solution for email. No html, no javascript or any other type of scripting = no fear of SPAM.
