I am looking for some advise and the general "lowdown" on the various
early G3 iMacs. I hope to purchase one but before I do, I figured that it
would be best if I ask people who know more about them. Based on the
information below, which iMacs should I consider? (I do not want to spend
too much money on this system so I am expecting it to be around 500 MHz or
less.)

Based on your requirements below, this is a terrible idea -- unless you plan to run ONLY older versions of this software on it.

Since you list stability as a major asset, I would strongly suggest an eMac -- maybe a refurbished one to help keep the cost down. Nice as the later G3 iMacs are (I'm writing this on one right now!), the 15" screen is a limitation, particularly for Photoshop. The relatively poor graphics card is another showstopper, preventing me from playing many 3D games reasonably -- a problem that will get worse as times go by. Luckily, I'm not much of a gamer.

Upgrades: Maxing out the RAM is definately a first on the list of things
to do. Also, do iMacs accept any newer ATA drive? Do they benefit from
faster ATA/133 drives and 8MB cache models?

I put just such a "newer" ATA drive into my G3/700 Snow iMac and it certainly made a difference. An eMac, of course, already has such equipment.
