I have been off the iMac List for awhile, so forgive me if this question has
already been asked and answered.
How does new 20" G5 iMac compare with the 20" G4 1.25 GHz iMac?
Out of the box, it's about the same speed. Eventually, people discover the Energy Saver panel and find that Apple has the processor set to automatically reduce its speed under light load. They change that to "Highest" and ZOOOOOOM!
IOW, it's significantly faster. Very noticeably so. With 1GB or more of RAM, *really* noticeably so.
Have people begun to receive the new iMac yet (and if not, how long is the wait)?
Two of my clients have one: one walked into the Apple Store and walked out with theirs, the other was delivered after a two-week wait.

so, what percent improvement do you think? Is it any quieter than the 1.25?
It's quieter, even at "Highest" setting, unless you really tax the processor or when first starting up.
Does it take up substantially less desk space, especially in terms of depth?
Yes.
Although I love the 20" screen, it is louder than I would like.
Wow. Either you a) have a defective model, b) are a monk attempting to hide your computer from the rest of the monestary, or c) will never be happy with ANY model PC *ever.* :)
And it is
not as fast as I was hoping, especially when doing digital video editing
(which I don't do that often) and Photoshoping (which I do regularly).
You really might want to consider the G5 tower, which is very quiet and has dual processors. This REALLY comes in handy when doing things that tax one of the processors, like re-encoding video or layering filters.
Even
Office 2004 does not run as fast as I was hoping (though it is faster than
Office X) -- considering how much I paid for my iMac.
?? You paid perhaps $300 more than the average PC user pays good-quality gear at considerably poorer performance.
Besides, Microsoft's focus with Office has *never* been to make it fast -- indeed quite the opposite. They *deliberately* bloat it down with features and have since at least Mac Office 6. They believe that most Office users do not require speed for the work that they do (and they're right -- most can barely even type!).
I use OS 10.3.5 with
768 MB of RAM, and I find that the OS is a little slow (and even a little
buggy, despite all the maintenance I do with TechTool Pro, DiskWarrior, OnyX
and Disk Utility).
There's no reason to be running any of those things more than once a month. I don't know what the problem is with your machine, but running all that maintenance isn't helping matters at all.
My university may soon give me some money for
technology, so I am trying to decide whether to eBay my G4 iMac and buy the
new G5 iMac.
Really, you sound custom-made for a dual G5. I think you can probably pick up a refurbished 2.0GHz dual for right around the kind of money you'd pay for a new 20" iMac. Maybe you can look into that.
