But that doesn't mean the iMac couldn't use a 256 MB chip, that just 
means the iMac wasn't well suited to run OS X. I've run OS X on Rev A 
bondi's and it is FAR FAR slower then running OS 9. I've also run it on 
333's, and it is also slower then running OS 9.

That is an OS X issue, not a lack of support for the ram.
