You can always download the desired ImageJ version from
http://maven.imagej.net/content/repositories/releases/net/imagej/ij/
and copy it to Fiji.app/jars/ (but make sure that you remove conflicting
ij-1.*.jar files, or else it is a game of luck whether you really get the
desired ImageJ version or not). Then restart Fiji.
