For Fiji, I would stick with OpenJDK 8 or 11. To use 17+, you need to pass
several --add-opens arguments at launch, or else the Java module system
causes a failure in the ImageJ backward compatibility layer.

It may be simplest to just let Fiji use its bundled Java, and then use your
preferred flavor and version of OpenJDK for your non-Fiji programs.
