Yep, that's easy. First edit the config_DefaultStylesheetSettings.cgi file
to display the colors of your choosing, then edit the
config_StyleSelections.cgi file to remove the options from the pull-down
menu.
You can take this method a step further and create a different default color
style for each virtual domain, too. Create a Web directory in each virtual
domain's directory, and put JUST the customized
config_DefaultStylesheetSettings.cgi file (and whatever other customized
config files you desire) in it.
