Sure, just list both MX records to point to the same place, and put both 
domains in the aliases for that host.  It'll continue to accept mail for 
both domains, and you can migrate your users to the new settings at your 
leisure.

By the way, nice city, Brisbane .. a good friend of mine is living there 
now.. :)
