Gary,
Setup his domain on your imail server as you would any other, this could
be a virtual domain with or without an ip address it really does not
matter.
Create a single account on imail, and create a nobody alias that points
to it.
If he is using Microsoft Exchange, he can use the free pop3 connector
add-on. It is available from somewhere on microsoft.com. Be aware that
the last time I used it there was a different version for Small Business
server.
If he does not have a mail server software on his site at all, then I
recommend a product called vpop3 -
