Wow, without the TTLs being a low number, you are asking for trouble.
When I have done this, I just set the TTL to 30 seconds and wait until
that TTL is in effect. Then I change the IPs and the DNS, and everything
is happy except for a few large dialup places (Earthlink, I see you
hiding your face in the back of the room) that have messed up DNSs that
seem to ignore TTLs.
Do you have a backup MX server? I am sure someone will correct me if I
am wrong, but even with a high TTL, a secondary MX server with IPHOSTS
with the new IP information should bail you out even if the TTL is high.
Follow my logic:
1. A server attempts to connect to the old IP due to having stale DNS
info.
2. As long as the old IP does not answer, the server tries the back up
MX.
3. The back up MX receives the message, and then attempts to send it to
the intended domain.
4. This succeeds, because the backup MX has the correct (new) IP.
