Actually, what you really need is only an MX record for the subdomain, in
the domain zone. Troy's case is working because, in the absence of an MX
record, an A record will do. Remember to create a new virtual host for the
sudomain in IMail (or an alias to an existing one):
In DNS domain.com zone:
subdomain MX <mailserver-IP-number>
In IMail:
create virtual host subdomain.domain.com
or
put an alias for subdomain.domain.com in some other visrtual host

This is working for us. In DNS we create the subdomain, give it an A record
with no host name, just the IP address, even if it's shared, then alias
"mail" to the A record, and create a virtual mail server for
mail.subdomain.domain.com. No problems so far.
