Wow,
OK, I'll try answer each of these questions.
I did not restart the system after deleting
all .dll + .exe files. After the deletion I reinstalled IMail 8.22 and then
rebooted and several times since. Actually yesterday I added a script and
created a task to reboot the server twice a day for this upcoming weekend. I
can't have these services stopping while I'm out on my boat.
I have not checked the HD's, however there is
5 and they are setup with RAID 0 + 5. I'm pretty sure they are fine per event
viewer and indicator lights.

going by what EV is telling me. I did not try to telnet yet but I will next
time.
I have
never seen this server come even close to maxing the CPU and it has 2gigs of RAM
that seem to handle everything rather easily.

That might indicate a backed up disk queue.
To
be honest, I am not sure what an HD queue is. I'll need to look that one
up.

I am getting "PerfProv"
warnings. Also" Event subsytem is suppressing duplicate log entries". Also
"W32Time" This is because I still have a NT DC that has not been upgraded yet.
Pretty much all seem harmless as far as I can tell. I will try to make all them
go away, but its going to take longer than an
afternoon.
Just to be clear, I am not 100% sure that
this is a IMail issue. I think it is, but like you are saying it could be
something else. I'm polling for any ideas people might have. I have done a lot
of digging already on my own and so far coming up
short.

Whenever I hear
about services that 'stop for no reason', I think "there must be a reason"! The
services are designed to work and always (OK, almost, but this is really rare!)
do. So the question becomes what is the reason. Most often, data corruption and
the 'repair' you did might not be sufficient to remove all questions about the
dll and .exe files. Did you check the HD system and repair it? Did you
restart the computer before/after replacing the files? The old dlls could still
be in memory...
Are you really sure
the services are not responding (can you telnet to the port and get a response)
or just responding very slowly? If slowly, then something is keeping the
computer busy or there are lots of existing connections (the numbers in the
telnet response line tell 2 things, how many since last restart and current
number of connections). What does Task Manager show? If CPU util is low, then
how about the HD and its queue? If that HD has a LED, is is always on?
That might indicate a backed up disk queue. If you have lots of
logging enabled, try turning some of it off (frees up disk resources).

Anyway, this should
get you started and maybe you can provide us with more info about the system
hardware and software on it.
