It doesn't matter the machine name,  The name of the incoming and outgoing mail servers are done in DNS settings on the DNS server that you are using to assign their host names ,etc...
 
My mail machine is called omega3, but that has NO effect on what the mail servers are called.

I need to setup IMail on a machine named pa-is-01.
 
The system will support 35 domains with approx 50 users per domain.
 
When the uses setup their email I would like to allow them to use mail.'their domain name'.com as the incoming mail (POP3) and outgoing mail (SMTP) mail server information.
 
Is there any way to do this or do I have to rename the host from pa-is-01 to mail and use mail.'single domain name'.com for all users of all domains?
