Try pointing your "domain.com" DNS record to your MX record server.

eg.
domain1.com    cname mail.domain.com
mail           A     xxx.xxx.xxx.
domain1.com    MX    mail.domain.com

OK, I read all that. But I still do not understand why the mail is 
going through my mail server when a different mail server is listed 
in the MX record.
