I believe this is because Exchange strips its proprietary groupware information from
the E-mails. If I recall correctly, the key is "RTF". You need to make sure that the
Exchange server is set up so that it recognizes the recipient as being capable of
accepting RTF messages (although this can be done by the client, it needs to be done
on the Exchange server).
What happens is that the Exchange server sees that the recipient address is not
capable of recieving RTF messages, so it strips the groupware stuff out of the E-mail.
If it sees that the recipient is capable of receiving RTF, it will send the groupware
stuff.
Just more MicroSoft philosophy at work.
