The RFCs require that the mail server record a "Received:" line that includes the host 
name of the remote machine (as shown in the HELO/EHLO text).  All decent mail servers 
add the IP address as well, which saves the administrator and the recipient of 
unwanted E-mail from having to do extra work to track down the real sender.  By 
stripping out the IP address, you will be responsible for tracking down users if 
needed.

Can I ask why you wish to do strip out the IP address of the sender?
