You can make a rule that says that mail that is to that user's mail address should go to   .,[EMAIL PROTECTED]   The ".," makes it go to him and then the root@whatever should be you. I believe this should work but test it obviously to see if the headers show that root is looking at the users mail. I don't think they will.
