I would suggest looking VERY closely at your IIS logs.  When you said "This 
was apparently NOT done from a form-mail.pl or
similar application as we have none of these on the server.", be aware that 
the spammers will often use their own programs (named something innocent, 
like "counter.exe", so they are well hidden in the logs).
