Assuming that you "replaced" the real address, have you tried to do an nslookup from the mail server?
I just queried your server and got the following response:

BTW, your primary ns1 timedout...

> server ns1.thedigest.com
DNS request timed out.
    timeout was 2 seconds.

You just seem to have a mistyped address...

Why don't you try earthlink.net not earthink.net...

>20020529 181258 127.0.0.1       SMTP (223) Trying earthink.net (0)
>20020529 181258 127.0.0.1       SMTP (223) [x] delivery to host earthink.net
>20020529 181343 127.0.0.1       SMTP (223) MX connect fail "192.168.1.1"

Um, do you mean that your users can't *send* to Earthlink users?

I ask because:

>It seems to show that one of our

This is outgoing E-mail, being sent to a Earthlink user.  Outgoing E-mail
problems are usually very different than incoming E-mail problems.

And here is the problem.  192.168.1.1 is a private IP address.

Most likely, someone accidentally entered "192.168.1.1  earthlink.net" in
your HOSTS file.

The other possibility is that the DNS server used with IMail is broken
(perhaps hacked into), and is returning invalid entries for earthlink.

Good -- that rules that out.

I'm guessing that you have different DNS settings for IMail than the
standard server settings (the three DNS servers listed above seem to
respond to earthlink.net without any problems).  If you go to the SMTP
settings, you'll see a box "Domain name server address" -- what is listed
there?  If it is not ns1.thedigest.com, ns2.thedigest.com, and/or
208.25.112.1, then you've probably found the problem.
