You can, but you would need to write or buy a program (such as ours) that
handles all the non-AV work for you (file locking, starting the scanner,
passing the good E-mails to IMail, deleting/quarantining viruses, sending
out notifications, etc.).

One word of caution here -- if you are having the mail stored on a file
share, you may find VERY poor performance. If you are doing this, you most
likely will want to use an (expensive) solution that does not involve
network shares, for fast access.
For example, if a user keeps their E-mail on the server, and has a 60meg
mailbox file (which is not uncommon), and they decide to delete a single
E-mail in the middle of it, you're talking about reading/writing over
100megs of data over a network link.
