FWIW, I haven't yet seen a case of a spammer that used IP spoofing.

It is technically possible, if you don't have a decent firewall (or have a 
decent firewall, and a spammer that knows the "safe" IPs that you allow 
mail from).  However, with a decent firewall, the chances are extremely 
slim that this would occur.  IP spoofing requires quite a bit of knowledge, 
and in any case the spammer would have no idea when you started blocking 
their spam.  So it would only be useful for spammers in rare cases.
