As a mail administrator, it's very important to know about log files.

By default, you will have a \IMail\spool\sys####.txt log file that will log 
information about incoming and outgoing E-mails.  It will record most/all 
of the SMTP transaction, but not the actual content of the E-mails 
(otherwise, the logs would be way too large).

But before you can look at the log file, you need to know what to look 
for.  So, you'll need to answer my "How do you know that the E-mails were 
sent through your mailserver?" question.  Did someone forward you one of 
these E-mails with complete headers?  If you've never looked at a log file, 
it's very likely that the spam didn't even come from your server (I've 
dealt with a number of mailserver administrators who didn't even know that 
E-mail had headers).
