Our setup is a little different - we have one mail server running Imail. However, we run a virus scanning SMTP service (Trend Interscan), which accepts incoming mail on port 25, scans all attachments, then forwards the mail onto Imail, which runs on the same server IP address, on a different port.
The best way to set up is reject all the spam you can by the MX and then AV scan what gets through. You've got it backwards.
