So my plan is to move my Imail installation to a store and forward box for
the Exchange server.

Good move, especially since you are using Declude -- filter spam and bugs before and after they hit the fertile virus breeding ground that is Exchange & outlook.

So, I have a couple of questions.

Would it still be possible to run my mailing lists from Imail and not
Exchange?

I think so, though it may require a change of address for the lists. Off the top of my head:

1) Re-configure the iMail server so that it's host name is 'lists.example.com' Don't enter any host aliases in the "general" tab of the domain settings.

2) set SMTP to "relay mail for" and enter the IP address of your Exchange server. Put an entry in the iMail server's host file for the exchange mail domain i.e.:

192.168.1.1 example.com

3) Tell Exchange to use the iMail server as a mail relay.

The (potentially big) drawback is that list mail will have to be send to '[EMAIL PROTECTED]' in order for iMail to process it.

Is there a utility, process, something that will help me to pull the
mailboxes and address books from the Imail server and move them to the
Exchange box?

Sorry, no advice on that one.
