1. If you don't know how spam works, you probably don't know how SMTP works, so you should start there in Google. 2. Are you receiving spam into local accounts, or relaying spam to remote accounts? Local delivery of spam is not relaying, by definition, and is unrelated to relay permissions. 3. Your most likely relaying vulnerability, if you indeed have 'No Mail Relay' selected, are brute-forced or otherwise compromised SMTP AUTH passwords (which are also POP3/IWEBMSG passwords). If this is so, you will see lines that end with "treated as local" in your logs before mail is accepted for remote delivery.
