It's essentially the opposite of a spam test. Rather than looking for signs of spam in an E-mail (that are rarely seen in legitimate E-mail), it works backwards, and looks for signs of legitimate content within an E-mail. For example, "Love," is something that would often be seen in a legitimate E-mail, but rarely ever in spam.
The use of the test is to give a negative weight to legitimate E-mail, to help prevent it from getting caught. That way, if someone sends E-mail from a poor mailserver that is likely to get caught as spam, this test will help ensure that it does not get caught.
