So what is the best way to handle bounces and deletions nowadays with so
many viruses floating around?

It seems that the problem here is that the virus is being rejected during 
the SMTP transaction, which is kind of silly.  Since the virus has already 
been transferred, you don't save any bandwidth.  However, you do end up 
bouncing many viruses back to the supposed sender (which in this case is
you!).
