I have seen reference on this list to entering "*" in the "Domain Name Server Address" to use the default DNS configuration of the server for Outgoing mail.
I would not recommend trying that -- I haven't heard of that being a valid option, and I know that it will cause problems with third party addons. :) I'm guessing that you're thinking of spam databases, where "*" indicates any return IP. Or perhaps IMail v8's anti-spam, which uses "*" as the DNS server to use for queries (unless you need to query a specific IP address for a spam database, which should be an extremely rare case).
I currently have a single IP address listed here, however the DNS resolver address provided by our ISP is often overloaded (causing errors).
I would suggest running your own DNS server (it could even be on the IMail server itself). Note that a good DNS server should be able to handle thousands of queries a second (I believe the root servers can handle 10,000s per second), so I would have to wonder about your Internet provider and their DNS server.
Is there a way to have Imail utilize multiple DNS servers to resolve outgoing mail addresses?
Yes -- just separate them with a space. For example, "192.0.2.53 192.0.2.54".
