Does anyone know of a way for me to make sure my DNS settings are correct

visual inspection

- I can't seem to receive any email on my server. I can send email from
the server just fine, but it won't seem to receive it. The thing about it
is, the messages I'm sending to the server don't seem to be bouncing back,
so I have to imagine something is receiving the messages, but nothing
shows up in the mailbox when I check the mail account on the Imail server.

what about the Imail logs?

Anyway, the only thing I can think of at this point is that my DNS
settings are either wrong

if your secret MX record (the one you aren't telling us) is sending the mail to the wrong IP, then the msg should be rejected as undeliverable.

or haven't yet made their way through the
Internet.

Average mail delivery to MXs takes under 10 seconds, so don't hold your breath that Interent is sitting on your mail somewhere.
