Vaughn,
Look at ASSP (http://assp.sourceforge.net), if offers Subject modification. I have 
mine set up to put [SPAM] in the subject. Also, it lets users report what is and is 
not spam via an automated process.

Notice: To the guys who asked for my web app to manage imail/assp I should be 
releasing a new version out that eliminates the need to go into imail to add a domain 
soon. As soon as I get the billable work to a manageable level.
