How can I tell the difference between being hijacked or joe-jobbed? 

And how can I really protect the server from attacks?

Regarding the NAT Session issue, I believe that it is occuring becuase of
all the replies from bounced messages from other mail servers. My table
supports only 1024 session per host.

I am upgrading everything next week; server, disks, firewall, etc.
