We want to send all mail destined for internal recipients over the WAN, all other mail goes over the Internet.

The way we have achieved this is to frig our DNS server to hold the MX records of the international mail servers.
DNS is only one name resolution service. There is also the hosts file which typically is queried before DNS.
This makes browsing to secure pages on member companies web-sites difficult.
spoofing zone authority, sounds like for many zones, just to route mail could be very difficult to maintain.

, WAN traffic over one router, everything else over the Internet. IMail SMTP configuration will not allow me to do this.
Does anyone have any ideas as to how I can achieve what I want?
sure, use an SMTP gateway box like IMGate that offers address per-user/per-domain re-writing/aliasing facilities and additional name resolution services. I designed a large Active Directory/Exchange + DNS+mail rollout project for the US military that did just what you want to do.
