Well, yes it would, but if mail clients start supporting SMTP AUTH as the standard, they'll probably build in 587 as the default since it's in the RFC.. just like port 25 is the default for SMTP.  So, by using it, you'll be minimizing effort in the future.   Also, it's always good to use the standard when it comes to interoperability with other networks.  More and more networks will be implementing and allowing 587 as time passes.  Using a non-standard port may bring some risk on it being blocked by default.
