You could setup a rule that searches the header for '[EMAIL PROTECTED]' and 
then delete the email.  I would recommend (at least
temporarily) setting up the rule to forward to an administrative email address 
to make sure no legit mail gets caught.

Here is my dilemma...I have a email address '[EMAIL PROTECTED]' that is no 
longer in use at this company.
 
I am assuming that the user of that address both signed up for a bunch of 
mailing lists, as well as replying to the SPAM notice
'click here to unsubscribe'.
 
50% of the SPAM mail received at this company is directed to this email 
address.  In addition, it is sometimes part of a multiple
addressed message like this:
 
[EMAIL PROTECTED];[EMAIL PROTECTED];[EMAIL PROTECTED];
 
What I would like to do is set up some sort of rule, process, whatever that if 
any email comes in with '[EMAIL PROTECTED]' in the 'To'
field it automatically gets deleted (before it goes to the other valid emails 
it is sometimes attached to).
 
Any thoughts on how I could do this?
