a) as noted before, setting a resource file on the Mac Options tab doesn't
work, in that the Distribution Builder won't replace resources in the built
app - hence you can't use this to set custom icons,bundles etc.

b) Once you've set a resource file however, there's no way to unset it.  The
best you can do is select a different file.  All you can do is throw away
all the changes made, or if you've already saved the config, start again
from scratch with a new one.

c) Further, it turns out that if you're building a Windows standalone at the
same time, it copies the Mac resources into that as well.  Shurely shome
mishtake.

d) In fact, even if you don't have anything selected in the "include
resources from file" bit of the MacOS Options tab, if you've selected the
'use dynamic memory allocation' checkbox on this tab, the Distribution
Builder will add a "TMEM" resource to the Windows exe - and, even if you
don't do that, it does set the type and creator codes of the Windows .exe to
"APPL" and the signature set for the Mac app.  It shouldn't assign any
resources to Windows apps at all under any circumstances (which might mess
up some distributions) and I don't think it should set the type to APPL
either.
