Since Excel 2011 for Mac doesn't support Pivot Charts, it sounds like expected behavior that Excel 2011 will corrupt a excel file if it tries to save any embedded Pivot Chart.
If I add Pivot Charts using Excel 2010, I don't open the file thereafter in Excel 2011. If Pivot Charts are important to you, consider running Windows+Excel 2010 on your Mac using Parallels or VMWare.
