I am assuming you are talking of on an email. It's simple, delete all your contacts from outlook or address boom (windows or mac) , then open iTunes and sync only contacts to outlook or address book, this time if it asked "replace or merge" , click on replace.
Now the empty contacts will come into your iPhone = empty contacts on your iPhone. If you want to keep your contacts on your pc/mac , just do a backup and restore after its done.
