I hate doing this, but I'd say the obvious first choice would be
whatever people within Sun are reportedly working on, very very
quietly (unless, of course, that's not the case).

Second, Conary has some interesting looking features (the rollback
stuff, being a big one).  I saw a blog entry from one of the Nexenta
guys that suggested they'd done similar with apt and zfs snapshots,
but there's a subtle but important difference between rolling back
packages (or other system state), and rolling back entire filesystems.
