Try going to "Preferences->Startup Programs" and uncheck the "GNOME
Keyring Daemon" and any Seahorse Daemon related startup programs if
you don't want to use the GNOME keyring.

Occasionally when launching vino-preferences it will ask me for the
"default keyring password."  I've never set up a keyring or a password
for one on this machine, and I don't see any UI for managing these.
Pointers, please?

There's a keyring manager called seahorse, which isn't installed by default but is available in the current /dev repository (SUNWseahorse). Not sure why you're being asked for a keyring password you haven't created, though...
