I want to say thanks for the tips I received over the last week or so. The problems turned out to be fairly minor permissions problems in both cases, but I might have taken a while longer to find them if not for some hints I got here (and on a french sendmail site hehe). I am so happy I have Cryus up and running! Yay! Time to break out the champagne... :-)
