Most any character is allowed as long as it's escaped with a slash.  I do think that apostrophes in an email address should be discouraged, however.  You can always have them set up their friendly name with the apostrophe and the email address without.  For example:
 
Name: John O'Brien
 
email address: [EMAIL PROTECTED]
 
Friendly address: "John O/'Brien"
