You can set variables as you point out there to remove the version numbers, but there is not currently a simple option to turn it off. When creating binary packages the version numbers add to path lengths (can be an issue on Windows), and offer another point of failure.
I can see why they are useful, but it would be good to make it simpler to turn them off in projects offering versioned install libraries/directories.
