When you say "doesn't work", what exactly happens? In particular, do you get an error message and if so what is it? (Also, having the output of "iperf3 --version" would be useful so we can see if your iperf3 executable actually has SCTP support compiled in or not...it's an optional feature that may or may not be built depending on the build environment.)
