Mobile safari will activate a "roller" on the bottom of the screen that easily allows you to flick through all the items in the select, then tap one to choose. It is very slick. The select element itself merely acts like a button to pop that roller up (much like a form's text input would pop the keyboard up). So, no worries -- even selects with many menu items are manageable.
